On March 28, at the Don State Technical University, the President of the East European Association of Sommeliers and Experts, leading teacher of the Mozart Wine House Sommelier Academy, Alexander V. Vinnik, held a lecture for students of the agro-industrial faculty. Together with future specialists, it was possible to discuss a fairly wide range of issues, starting with the history of viticulture and winemaking, general production issues, ending with the current state of the industry in Russia and the prospects for its development. And, of course, the faculty practitioners handed over the result of their work - Cahors from the Saperavi variety - to the specialists of the Sommelier Academy for tasting.
The students of the professional course of the Mozart Wine House Sommelier Academy analyzed the provided sample in detail. The color of the wine is deep, rich ruby. The texture is oily. The intense aroma reveals notes of blackberry, cherry, pomegranate, prune, light notes of dark chocolate.
After cryo maceration of the pulp, the Cahors was aged on oak chips, which is visible in the aroma and taste.
The DSTU students managed to make a moderately rounded, full-bodied, bright wine with a long aftertaste.
