This wine accessory is designed to assess how a wine will evolve during aging.
Thanks to a chemical process based on a metal alloy, the Clef du Vin enhances, through simple contact with liquid, the natural oxidation process that underlies the complexity and intensity of a fine wine. That is, the Clef du Vin gradually changes the oxidation-reduction balance in the direction of flavor destruction. Every second of contact with 100 ml of wine (or a 750 ml bottle if using the appropriate key) will shift the wine towards oxidation along the oxidation-reduction curve.
In this way, the Peugeot Clef du Vin allows you to immediately determine the ageing potential of a wine, since if after prolonged contact with a few drops the wine maintains the characteristics of its aromatic profile or improves, it will certainly age well. If, on the contrary, it deteriorates, it must be drunk within a year. The Clef du Vin also allows you to enjoy the pleasure of opening a bottle before it is fully mature, since this can help to balance a young wine, revealing all the richness of its dormant aromas more quickly.
The wine key is suitable for all types of red, white, pink, sweet, aged, dry or sparkling wines.
The students of the Mozart Wine House Sommelier Academy have already tried working with the wine key during the professional course. Come and visit us!
