Today, with the support of the East European Association of Sommeliers and experts, the professional sommelier course has started — and from the very first day the future specialists are studying the history of winemaking, learning the basics of tasting, and acquiring specialized terminology. The program combines theory and practice: lectures, sensory training, and practical sessions with a variety of wine samples, because 80–90% of what we perceive as “taste” is actually smell. That is why sommelier training places great emphasis on developing the sense of smell and the ability to verbally convey aromatic impressions.
